Ingredients:
    4 cups old-fashioned oats
    1 1/2 teaspoons baking powder
    1 teaspoon salt
    4 cups milk
    3 eggs
    3 tablespoons melted butter or oil
    2 teaspoons vanilla or 4 teaspoons bourbon
    1 cup frozen wild blueberries
    1 package (8 oz) softened cream cheese
    1/3 cup granulated sugar
    up to 1/2 cup blueberry preserves

Directions:
In large bowl, mix together oats, milk, baking powder, salt, 2 eggs, melted butter, vanilla, and frozen blueberries.
Pour into a greased 13x9-inch (3-quart) baking dish baking dish; let stand 15 minutes. Preheat oven to 350°F.

🌶️ Pumpkin Enchilada Sauce:
    15oz of pure canned pumpkin
    2 tbsp olive oil
    1 tsp salt
    ½ tsp cumin powder
    ~250g diced white onion
    4 cloves garlic, smashed
    3 dried guajillo chiles, stems and seeds removed
    2 chipotle chiles or 1 tsp chipotle powder
    1 tsp Meixcan oregano
    3–4 cups stock or broth
    1 ½ tbsp apple cider vinegar
Cook the onions, salt, cumin, garlic, guajillo, chipotle, and oregano in hot olive oil until translucent. Deglaze the pan with a splash of broth and scoop everything into a blender.
